Bellwether is a true boutique winery in every sense of the word – an old shearing shed is their compact working winery and guests can even glamp there.
In the winery: The traditional techniques used, which are influenced by both the old and new world’s of wine include, hand-pruning, hand-picking, indigenous yeast, French oak and basket pressing.
In the glass: Deep red.
On the nose: Cassis, plum, tobacco, eucalypt, five spice, anise and bay leaf.
On the palate: Bold palate with loads of dark fruit flavour, distinctive crushed leaf varietals, powerful tannins, red berry-like acidity and a long finish.
