Using some of the oldest vines on the Mornington Peninsula, Rollo Crittenden has crafted a Fumé Blanc that aims to present smoky minerality with both texture and length.
Hand-harvested and whole-bunch pressed, the fruit for this wine was put in small and medium sized barrels, where a natural ferment was allowed to start spontaneously with a high degree of solids and no temperature control.
Post ferment, the wine was rested on lees in the same oak and the lees were periodically stirred back into the wine to increase complexity and enhance mouthfeel.
Fine, ripe varietal white fruit, floral and melon aromas with simmering oak and spice richness lead to a palate with delicate spicy florals, delicious fruit sweetness, lovely texture and perfectly balanced classy oak in support.
