This delicate Riesling comes from Forest Hill in WA, a family-owned boutique winery and home to Australia's oldest cool-climate vineyard.
A key aim of the winemaking was to preserve the delicate flavours and aromas of this variety. The fruit was hand picked and whole bunch pressed to avoid maceration (phenolics). The juice was cold settled, racked and left to ferment with wild yeast. Bottled early to preserve the pristine fruit flavours.
Pale straw plus green in colour, it displays classic lemon juice with salty minerality on the nose and light, zippy free-run Riesling flavours. Given it’s still shy with a firm backbone of acidity, it will reward careful cellaring.
