Prawn salad with Tom Yum Mayo

At the beginning of February, around the globe the Asian community celebrates Lunar New Year – an opportunity to share joy, hopes and good fortune with loved ones.
Food is fundamental to this celebration, not only as it brings people together, but also through the symbolism conveyed through each dish. Preparing and sharing food is a blessing with meaning bestowed through the ingredients.
For example, prawn in Cantonese is ‘ha’, which mimics the joyful sound of laughter and so they represent joy. May you have lots of it this year as you try this classic spicy and flavoursome Thai salad; made fragrant with authentic Valcom Tom Yum paste.
Ingredients
3 tbsp Kewpie Mayonnaise
1 tbsp Valcom Tom Yum Paste
1 tbsp tomato sauce
1½ tbsp oil
1 tbsp water
1 tsp sugar
A splash of Squid Brand Fish Sauce
A pinch of black pepper
6-8 prawns (peeled)
½ avocado (diced)
½ cup heirloom tomatoes (halved)
½ cup cucumber (sliced)
½ cup rocket salad leaves
Garnish
Micro coriander
Edible flowers
Mixed micro herbs
Method
1. Add mayonnaise, Valcom Tom Yum Paste, tomato sauce, oil (1 tbsp), water and sugar in a bowl and mix well. Set aside as salad dressing.
2. Mix prawns with fish sauce and black pepper.
3. Heat the remaining oil in a hot pan until the oil begins to smoke. Add prawns into the hot oil cooking them for about 30 secs each side.
4. To serve, arrange all the vegetables, avocado and prawns on the plate. Add some dressing on top or serve at the side.
