Michael Portley's HUMBUG salad supreme recipe might look like your average salad, but this dish will trick your tastebuds into thinking you're eating pizza!
¼ iceberg lettuce
1 whole yellow bullhorn pepper, sliced into rings
12 pitted green olives, sliced into rings
12 slices hot pepperoni, cut into half moons
1/8 brown onion, sliced paper-thin
1 whole avocado, quartered and sliced
30 leaves parsley
1 tbsp seeded mustard
1 clove garlic, minced
40ml white wine vinegar
1/2 tbsp good quality dried oregano
20ml delicate extra virgin olive oil

1. Add mustard, white wine vinegar, garlic, dried oregano, olive oil, salt and sugar to a jar. With the lid on tight, shake vigorously.
2. Pre-wash peppers and lettuce and cut the lettuce into bite-sized pieces.
3. Place all salad ingredients in a mixing bowl. Season with a little salt flake, and then dress liberally and serve.
